Inspired by viral hot honey flavours and comforting pasta salads, this recipe is perfect for quick lunches, easy dinners or summer gatherings. The combination of crunchy croutons, creamy dressing and warm salty halloumi creates a fresh yet indulgent dish packed with texture, flavour and contrast in every bite.

Ingredients

Fusilli Pasta - Fusilli is perfect for halloumi caesar pasta salad because the twists trap all that creamy Caesar dressing. It adds substance and makes the salad filling enough to enjoy as a complete meal.
Ciabatta or Croutons - Crunch is essential in any good halloumi caesar pasta salad. Ciabatta creates crispy golden croutons with a chewy centre and crunchy edges. I love making homemade croutons because they taste fresher and soak up flavour so well.
Halloumi - Halloumi is the star of this halloumi caesar pasta salad. Frying it until golden gives it crispy edges and a soft chewy centre. Soaking the halloumi in boiling water before cooking helps soften it slightly and improves the texture.
Olive Oil - Olive oil helps crisp up the croutons and gives the halloumi a beautiful golden crust when frying.
Caesar Dressing - A creamy Caesar dressing ties the whole halloumi caesar pasta salad together. You can use a shop bought dressing or make your own lighter yoghurt Caesar dressing (given in notes) for extra freshness.
Honey - Honey adds sweetness that balances the salty halloumi and creamy dressing perfectly. Once heated with chilli flakes it creates an irresistible sticky glaze.
Chilli Flakes - Chilli flakes bring warmth and subtle heat to this halloumi caesar pasta salad. I like using chilli flakes because they add spice without overpowering the other flavours.
Romaine Lettuce - Romaine lettuce keeps this halloumi caesar pasta salad crisp and fresh. Its crunchy texture works perfectly with the creamy dressing and warm halloumi.
Parmesan - Parmesan adds savoury depth and nuttiness to the halloumi caesar pasta salad. It finishes everything off with that classic Caesar flavour.

Instructions
Jump to Recipe for quantitiesStart by chopping the romaine lettuce, grating the parmesan and cubing the halloumi. Mix the honey and chilli flakes together ready for later. If making homemade croutons, cube the ciabatta and toss with olive oil, salt and pepper until evenly coated.

- Step 1: Spread the ciabatta cubes onto a baking tray and bake at 200C for around 10 minutes until golden and crisp. While the croutons cook, boil the fusilli according to the packet instructions until al dente. Once ready, drain.

- Step 2: Meanwhile, soak the cubed halloumi in boiling water for 5 minutes, then pat dry thoroughly (this is an optional step but it softens the halloumi and draws out excess salt preventing it from being too squeaky). This helps give the halloumi a softer texture inside while still crisping up beautifully outside. Heat olive oil in a frying pan over medium heat. Add the halloumi cubes and fry for a couple of minutes on each side until golden and crispy. Pour over half the hot honey mixture and cook for another minute until sticky and glossy.

- Step 3: Add the pasta, lettuce, croutons and parmesan to a large bowl. Toss with the Caesar dressing until evenly coated. Top with the crispy hot honey halloumi and drizzle over the remaining hot honey sauce.

- Step 4: Toss, plate up and serve.
Hint: If preparing this halloumi caesar pasta salad ahead of time, keep the lettuce and croutons separate until serving so they stay crisp.
Substitutions
Fusilli Pasta – Swap with penne, rigatoni or bowtie pasta for a similar texture, or use wholewheat pasta for extra fibre and nuttiness. For a gluten free option, use chickpea or lentil pasta which also adds extra protein.
Ciabatta – Replace with sourdough for extra chewiness and flavour or baguette for crispier croutons. You could also use shop bought croutons for convenience.
Halloumi – Use paneer for a similar firm texture or feta for a saltier, creamier finish. For a vegan alternative, use firm tofu or vegan halloumi style cheese.
Olive Oil – Swap with avocado oil for a more neutral flavour or chilli oil for extra heat and depth.
Caesar Dressing – Use ranch dressing for a creamier flavour or Greek yoghurt dressing for a lighter, fresher option. Vegan Caesar dressing also works well.
