Hot Honey Halloumi Caesar Pasta Salad

If you love crispy cheese, creamy dressing, crunchy croutons and bold flavour, this hot honey halloumi caesar pasta salad is going to become one of your favourite easy dinners. This recipe combines everything people love about a classic Caesar salad with golden fried halloumi, pasta and a sweet spicy hot honey drizzle that takes it to another level.

Ingredients
  

  • 200 g pasta fusilli
  • 1 small ciabatta loaf tossed with 1 tablespoon olive oil salt and pepper or 100g croutons
  • 225 g halloumi cubed
  • 2 tablespoon olive oil
  • 3-4 tablespoon caesar dressing see notes for my homemade healthier yoghurt caesar dressing ingredients
  • 2 tablespoon honey
  • 1 teaspoon chilli flakes
  • 1 head romaine lettuce
  • 25 g grated parmesan
  • Salt and pepper

Instructions
 

  • Start by chopping the romaine lettuce, grating the parmesan and cubing the halloumi. Mix the honey and chilli flakes together ready for later. If making homemade croutons, cube the ciabatta and toss with 1 tablespoon of the olive oil, salt and pepper until evenly coated.

  • Spread the ciabatta cubes onto a baking tray and bake at 200C for around 10 minutes until golden and crisp. While the croutons cook, boil the fusilli according to the packet instructions until al dente. Once ready, drain.

  • Soak the cubed halloumi in boiling water for 5 minutes (this is an optional step but it softens the halloumi and draws out excess salt preventing it from being too squeaky), then pat dry thoroughly. This helps give the halloumi a softer texture inside while still crisping up beautifully outside. Heat olive oil in a frying pan over medium heat.
  • Add the halloumi cubes and fry for a couple of minutes on each side until golden and crispy. Pour over half the hot honey mixture and cook for another minute until sticky and glossy.
  • Add the pasta, lettuce, croutons and parmesan to a large bowl. Toss with the Caesar dressing until evenly coated. Top with the crispy hot honey halloumi and drizzle over the remaining hot honey sauce.

Notes

To make your own Caesar dressing, whisk together 1 clove finely minced garlic, 1 teaspoon anchovy paste, 1 egg yolk, 1 tablespoon greek yoghurt, 1 tablespoon olive oil, 1tsp Dijon mustard, 1 teaspoon Worcestershire sauce, 30g freshly grated parmesan, a pinch of salt and pepper and a splash of lemon juice
