Preparing the Chicken Gyros Smash Tacos

- Step 1: If you choose to cook your own fries for the Chicken Gyros Smash Tacos, start by peeling and slicing a potato into thin, even slices, then cut each slice into skinny fries. Soak the fries in cold ice water for a few minutes to remove excess starch. After soaking, pat the fries dry with a kitchen towel, then toss them in a bowl with a bit of olive oil, salt, and paprika. Preheat your air fryer to 200°C (about 400°F) and spread the fries in a single layer in the basket. Cook for 20-25 minutes.

- Step 2: In a large mixing bowl, combine the chicken mince with thyme, cumin, marjoram, the juice of half of a lemon and garlic salt. Mix thoroughly until the spices are evenly distributed throughout the meat.

- Step 3: Add the chopped fresh coriander to the gyros smash tacos mixture and mix again until everything is well combined.

- Step 2: Flip the tortillas over and cook for another minute to ensure the chicken is fully cooked through.

- Step 3: Remove the tortillas from the pan and spread a generous layer of tzatziki on top.

- Step 4: Add a few fries or crispy potato slices, followed by chopped cucumber, cherry tomatoes, and diced red onion. Drizzle with a little more tzatziki and garnish with fresh coriander.
