Ingredients

Chicken Breasts - Chicken breasts are the perfect protein for this recipe. They’re lean, cook quickly, and their mild flavor serves as a great canvas for the bold buffalo sauce. When cut into cubes, they provide the ideal bite-sized pieces that are perfect for coating in a crispy layer.
Cornflour and All-Purpose Flour - This dynamic duo creates the ultimate crispy coating. Cornflour (cornstarch) is key for achieving that light, crispy texture, while the all-purpose flour (Plain flour) adds substance and ensures the coating sticks well to the chicken. Together, they make for an irresistibly crunchy bite.
Garlic Powder and Paprika - These spices are essential for flavoring the coating for chicken before it even touches the buffalo sauce. Garlic powder adds depth and a savory note, while paprika brings a subtle smokiness that complements the heat of the buffalo sauce perfectly.
Romaine Lettuce - Romaine is the go-to green for a Caesar salad due to its crisp texture and sturdy leaves.
Croutons - These add a necessary crunch which makes every bite of the salad satisfying.
Blue Cheese - Blue cheese is a classic pairing with buffalo chicken. Its sharp, tangy flavor stands up to the heat and richness of the buffalo sauce, adding a creamy contrast that mellows out the spiciness.
Parmesan Cheese - Shaved or grated parmesan adds a salty, nutty flavor that ties all the elements of the Caesar salad together.
Caesar Dressing - This creamy, tangy dressing is the soul of a Caesar salad. It coats the lettuce and other ingredients in a rich, umami-packed sauce that complements the spicy buffalo chicken without overwhelming it.
Buffalo Sauce (Hot Sauce, Butter, White Wine Vinegar, Garlic Powder) - Hot sauce (I like to use Franks) brings a spicy kick and tanginess. The butter adds a smooth richness that helps the sauce cling to the crispy chicken. The vinegar sharpens the flavors, making the sauce pop, and the garlic powder adds an extra layer of flavor.

Instructions

- Step 1: Start by chopping the chicken breasts into bite-sized cubes. This size is ideal for even cooking and ensures every piece gets evenly coated with the flavorful breading and sauce. Prepare two bowls: one with a beaten egg, and another with a mixture of cornflour, all-purpose flour, garlic powder, and paprika. Dip each chicken cube into the egg first, ensuring it's fully coated.

- Step 2: Dredge the egg coated chicken piece in the flour mixture. This double-coating technique guarantees a crispy exterior for the buffalo chicken bites.

- Step 3: Place chicken cubes on an air fryer tray or oven tray. Spray or drizzle with a little cooking oil to help them crisp up. If using an air fryer, cook at 400°F (200°C) for 12 minutes, flipping halfway through. For oven instructions, bake at 425°F (220°C) for 20-25 minutes, flipping once, until golden brown and cooked through.

- Step 4: While the chicken is cooking, make the buffalo sauce. In a small saucepan, melt the butter and combine it with hot sauce, white wine vinegar, and garlic powder. Stir until smooth and well combined. Once the chicken is cooked and crispy, toss it in the prepared buffalo sauce until evenly coated. For an optional extra crispy, saucy finish, place the chicken back in the air fryer or oven for an additional 2-3 minutes.

5. Step 5: In a large bowl, layer the base with fresh, chopped romaine lettuce. Add a generous handful of croutons, followed by blue cheese crumbles and shaved parmesan.

6. Step 6: Top the assembled salad with the buffalo chicken, and finish with a drizzle of creamy Caesar dressing. Serve immediately while the chicken is still warm and crispy.
Hint: When you flip the chicken over half way, spray or drizzle with some more cooking oil to ensure it goes extra crispy while cooking.
Substitutions for Buffalo Chicken Caesar salad
Chicken Breasts - Instead of chicken breasts, you can use chicken thighs for a juicier texture, or tofu for a vegetarian option of this buffalo chicken caesar salad. Tofu absorbs the buffalo sauce well and provides a similar bite.
Cornflour and All-Purpose Flour - You can use rice flour instead of cornflour for an extra crispy texture. For a gluten-free option, use a gluten-free all-purpose flour blend in place of regular all-purpose flour. You can also just use only all purpose flour instead of doing a mix of the two.
Garlic Powder - Use onion powder instead of garlic powder for a slightly different but still savory flavor, or fresh minced garlic for a more intense garlic taste.
Paprika - Chili powder can be used instead of paprika if you want an extra kick of heat.
Romaine Lettuce - Instead of romaine lettuce, you can use iceberg lettuce for a crunchier texture or spinach for a softer, more nutrient-dense base.
Croutons - Roasted chickpeas would work in place of croutons for a gluten-free, crunchy alternative, or crushed tortilla chips for a different texture and flavor.
Blue Cheese - Instead of blue cheese, you can use feta cheese for a milder, tangy flavor, or goat cheese for a creamier texture with a slightly tart taste.
Parmesan Cheese - Use Pecorino Romano for a sharper, saltier flavor, or nutritional yeast for a dairy-free, cheesy alternative.
Caesar Dressing - You can substitute caesar dressing for use ranch dressing for a similar creamy dressing, or a vinaigrette if you prefer a lighter, tangier dressing.
Buffalo Sauce - Instead of hot sauce, you can use sriracha for a slightly sweeter heat, or BBQ sauce if you prefer a milder, smoky flavor. You can replace butter with olive oil for a dairy-free option, or use margarine for a similar richness without dairy.
Variations
Spicy - For a spicy version of this crispy buffalo chicken salad, use a blend of cayenne and chili powder in the breading for extra heat. Add sriracha or extra hot sauce for a fiery kick and Include sliced jalapeños and a sprinkle of red pepper flakes in the salad. Finish with a drizzle of spicy ranch or chipotle Caesar dressing for an added punch.
Deluxe - Top with avocado slices and crispy bacon for richness, and drizzle with truffle Caesar dressing for a luxurious finish.
Kid friendly - Replace buffalo sauce with mild BBQ sauce for less heat, and use chicken tenders for easy eating. Add shredded cheddar instead of blue cheese and use a ranch dressing drizzle instead of Caesar. Add cherry tomatoes for a pop of color and sweetness.
Equipment
Storage
To store leftovers, keep the components separate to maintain freshness. Place the crispy buffalo chicken in an airtight container and refrigerate for up to 3 days. Reheat it in an air fryer or oven at 180°C (350°F) for 5-7 minutes to restore crispiness. Store the fresh lettuce, croutons, and cheeses separately in airtight containers in the fridge.
For optimal texture, toss the salad together just before serving. Caesar dressing should be stored in a jar or container and used within 5 days. Avoid freezing, as the salad ingredients will lose their texture, and the dressing may separate.
Top Tip
For an optional extra crispy and saucy finish, place the chicken back in the air fryer or oven for an additional 2 minutes after adding the buffalo sauce, this helps the sauce stick to the chicken while still keeping it's crunchy, crispy texture.
