Ingredients
  

  • 500 g chicken breasts
  • ½ cup cornflour 60g
  • ½ cup all purpose flour 60g
  • 1 teaspoon garlic powder
  • 1 tablespoon paprika
  • 2 large romaine lettuce
  • 200 g croutons
  • 100 g blue cheese
  • 30 g parmesan shaved or grated
  • 4 tablespoon caesar dressing
  • 1 egg

Buffalo sauce

  • ½ cup hot sauce 120ml
  • 1 tablespoon butter
  • 1 tablespoon white wine vinegar
  • 1 teaspoon garlic powder

Instructions
 

  • Start by chopping the chicken breasts into bite-sized cubes.

  • Prepare two bowls: one with a beaten egg, and another with a mixture of cornflour, all-purpose flour, garlic powder, and paprika. Dip each chicken cube into the egg first, ensuring it's fully coated.

  • Dredge the egg coated chicken piece in the flour mixture. This double-coating technique guarantees a crispy exterior for the buffalo chicken bites.
  • Place the coated chicken cubes on an air fryer tray or oven tray. Spray or drizzle with a little cooking oil to help them crisp up. If using an air fryer, cook at 400°F (200°C) for 12 minutes, flipping halfway through. For oven instructions, bake at 425°F (220°C) for 20-25 minutes, flipping once, until golden and cooked through.
  • While the chicken is cooking, make the buffalo sauce. In a small saucepan, melt the butter and combine it with hot sauce, white wine vinegar, and garlic powder. Stir until smooth and well combined.

  • Once the chicken is cooked and crispy, toss it in the prepared buffalo sauce until evenly coated. For an optional extra crispy, saucy finish, place the chicken back in the air fryer or oven for an additional 2 minutes.
  • In a large bowl, layer the base with fresh, chopped romaine lettuce. Add a generous handful of croutons, followed by crumbled blue cheese and shaved parmesan.

  • Top the assembled salad with the buffalo chicken, and finish with a drizzle of creamy Caesar dressing. Serve immediately while the chicken is still warm and crispy.

Notes

When you flip the chicken over half way, spray or drizzle with some more cooking oil to ensure it goes extra crispy while cooking.
