Chicken Mince - I love using chicken mince for these meatballs because it keeps them light yet juicy. It also absorbs all the bold fajita flavors, making every bite delicious.
Fajita Seasoning - A key ingredient in these chicken fajita bowls, fajita seasoning brings a smoky, slightly spicy kick. I always reserve a little to season the onions and peppers for that classic sizzling fajita taste. I usually use store bought fajita seasoning for ease but for homemade fajita seasoning you can combine 10g (2 tsp) Paprika , – 5g (1 tsp) Ground Cumin, 3g (½ tsp) Garlic Powder , 3g (½ tsp) Onion Powder, 3g (½ tsp) Chili Powder, 2g (½ tsp) Dried Oregano, 2g (⅓ tsp) Salt.
Chipotle Paste - Chipotle paste adds a deep, smoky heat that elevates the meatballs. It’s one of my favorite ingredients because it brings a restaurant-quality depth of flavor with minimal effort.
Milk & Breadcrumbs - These two ingredients keep the meatballs tender and juicy, preventing them from drying out in the oven.
Cheddar Cheese - Adding grated cheddar inside the meatballs gives them a deliciously melty texture. I also sprinkle some extra on top for a cheesy, indulgent touch.
Onions & Peppers - A classic fajita pairing! Using multicolored red, yellow and green bell peppers adds sweetness and vibrancy to the dish, while onions provide a rich, caramelized flavor.
Tortilla Wraps (Cut into Triangles) - Instead of store-bought tortilla chips, I like to toast my own. They crisp up beautifully in the oven, adding the perfect crunch to these chicken fajita bowls.
Toppings
The toppings are what take these chicken fajita bowls to the next level! Here’s my favorite toppings that I love to include:
Sour Cream – A cool, creamy contrast to the spicy flavors.
Fresh guacamole – Adds freshness and a buttery texture.
Extra Cheddar Cheese – Because you can never have too much cheese!
Chipotle Mayo – A smoky, spicy drizzle to tie everything together.
Fresh Coriander (fresh cilantro) – For a bright, herby finish.
Pico de gallo - a classic Mexican salsa made with fresh tomatoes, onions, coriander, lime juice, and a touch of jalapeño for a little heat
Other toppings I chose not to add but would also be delicious could include black beans / refried beans, brown rice, white rice or cauliflower rice, poblano peppers, sweet corn or tortilla chips.

Instructions

- Step 1: Preheat the oven to 180°C (356°F). In a bowl, mix chicken mince, fajita seasoning (reserving some for later), chipotle paste, milk, breadcrumbs, and grated cheddar. Combine well, then roll into evenly sized meatballs.

- Step 2: Heat a pan with a little olive oil over medium-high heat. Add the meatballs and cook, turning every couple of minutes until golden brown. Transfer to an oven tray and bake for 10 minutes to finish cooking through. While the meatballs are in the oven, place the tortilla triangles on a baking tray and bake until crisp and begin to cook onions and peppers. If you want to check if the chicken is cooked use a meat thermometer to make sure the internal temperature is 75°C (165°F) to ensure they are fully cooked and safe to eat.

- Step 3: In the same pan used for the meatballs, heat a little more oil over medium heat. Add the onions and peppers along with the reserved fajita seasoning. Sauté for 8-10 minutes until soft and slightly caramelized.

- Step 4: Divide the sautéed onions and peppers, tortilla chips, and meatballs between bowls. Top with sour cream, guacamole, extra cheese, chipotle mayo, and fresh coriander. These chicken fajita bowls are perfect on their own, but you can also serve them with: Fluffy white or Mexican-style rice, Warm, soft tortillas for a DIY fajita experience or a fresh side salad for extra crunch.
Hint: For the best texture, cook the onions and peppers over medium heat, stirring occasionally, so they soften without burning. Adding a pinch of sea salt helps draw out moisture, making them caramelize slightly. If you like a smoky char, let them sit untouched for a minute before stirring.
Substitutions
Chicken Mince - If you don’t have chicken mince then you can make your own by adding chicken thighs or skinless chicken breast to a food processor. Turkey mince is a great lean alternative with a similar texture. For a heartier flavor, beef mince works well, though it will have a richer taste. If you're looking for a vegetarian option, crumbled tofu seasoned with fajita spices makes a great plant-based swap.
Fajita Seasoning - Taco seasoning has a similar mix of spices with a slightly different balance. Cajun seasoning adds a smoky, slightly spicier twist. You can also make your own blend with paprika, cumin, garlic powder, onion powder, chili powder, oregano, salt, and cayenne.
Chipotle Paste - Chipotle paste gives a smoky heat, but if you don’t have it, smoked paprika provides a milder, smoky flavor. Chipotle powder is another great alternative, just adjust the quantity to taste. Adobo sauce from canned chipotle peppers works beautifully for a deep, rich spice.
Milk - If you want a dairy-free option, chicken stock works well to add moisture while keeping the flavors balanced. Egg is also a good binder to use for meatballs.
Breadcrumbs - Crushed Tortilla Chips, Panko, or Oats
If you don’t have breadcrumbs, crushed tortilla chips add a great texture and extra flavor. Panko breadcrumbs are another excellent option for a lighter, crispier bite. For a gluten-free alternative, ground oats work as a great binder in meatballs.
Cheddar Cheese - Cheddar cheese adds richness, but you can switch it for Monterey Jack for a milder, meltier texture. Mozzarella works well if you want a creamier bite. For a dairy-free version, opt for a vegan cheese that melts well.
Onion - If you don’t have a regular onion, shallots add a slightly sweeter taste. Red onion works well for a milder, slightly tangy flavor. Leeks can also be used and will add a softer, more delicate onion taste.
Peppers - zucchini slices work as a great fresh alternative to peppers. Mushrooms add a meaty texture and umami flavor. If you’re short on fresh peppers, roasted red peppers from a jar provide a sweet and smoky depth.
Topping substitutions
Sour Cream - Greek yogurt is a great high-protein alternative to sour cream with a similar tangy taste. Crème fraîche works well for a richer, slightly less tangy option. For a dairy-free swap, use a plant-based yogurt with a squeeze of lime.
Guacamole - If you don’t have guacamole, simply mash an avocado with a little salt and lime juice. Avocado lime dressing is another creamy alternative with a zesty kick. Hummus can also work if you want a different but still creamy and flavorful element.
Grated Cheddar Cheese - Cotija cheese adds a salty, crumbly texture, while queso fresco gives a mild, creamy bite. If you’re looking for a dairy-free option, nutritional yeast provides a cheesy umami flavor.
Coriander - Not a fan of coriander? Parsley gives a fresh, herby touch without the citrusy notes. Green onions work well for a slightly sharper, milder alternative. For a unique twist, basil adds a fragrant freshness.
Chipotle Mayo - If you’re out of chipotle mayo Mixing plain mayo with chipotle paste or smoked paprika creates a quick and easy smoky alternative. Sriracha mayo brings a similar heat with a different spice profile. Garlic aioli adds a creamy, garlicky kick.
Wraps (for Chips) - If you don’t have wraps to make homemade chips, pita bread cut into triangles and toasted works well. Corn tortillas can also be used for a more authentic Tex-Mex flavor. Store-bought tortilla chips are a quick and easy alternative.
Variations
Low-Carb Chicken Fajita Bowls - Swap out the tortilla chips for cauliflower rice or lettuce wraps to keep things low-carb. You can also use Greek yogurt instead of sour cream for a protein boost while keeping it creamy. Add extra avocado for a healthy fat and extra richness for some healthy chicken fajita bowls.
Spicy Chicken Fajita Bowls - Amp up the heat by adding extra chipotle paste, diced jalapeños, or a drizzle of hot sauce over the top. You can also sprinkle crushed red pepper flakes or mix in chili powder with the fajita seasoning. Spicy lovers will enjoy adding habanero salsa as an extra topping.

If you’re making these chicken fajita bowls ahead of time, store each component separately to keep everything fresh. The chicken meatballs can be refrigerated in an airtight container for up to 4 days or frozen for up to 3 months—just reheat in the oven at 180°C (350°F) until warmed through.
The sautéed peppers and onions stay fresh in the fridge for 3-4 days in a sealed container. To reheat, quickly warm them in a pan over medium heat or in the microwave for 1-2 minutes.
For the tortilla chips, store them in an airtight container at room temperature for up to 5 days—if they lose crispiness, pop them in the oven at 180°C (350°F) for a few minutes to revive them.
Toppings like sour cream, guacamole, and chipotle mayo should be added fresh, but guacamole lasts longer with a squeeze of lime to prevent browning!
