Ingredients

Ribeye steak - Ribeye is my go-to cut for this recipe because of its rich marbling, which makes it juicy and flavorful. When seared, the fat melts beautifully, adding depth to your cheesy chipotle steak tacos.
Mini tortillas - I love using mini tortillas (especially my homemade mini tortillas) for the cheesy chipotle steak tacos because they’re the perfect size for handheld tacos, making them great for gatherings or just a fun meal at home. The small size also ensures that each bite is packed with flavor.
Grated cheddar - Melting cheese directly onto the tortillas gives these tacos that irresistible crispy-cheese finish. The cheddar adds a sharp, creamy contrast to the smoky chipotle flavors.
Olive oil - Helps carry the flavors of the marinade and ensures a nice, even sear on the steak. I always use olive oil for its subtle fruitiness and health benefits.
Honey - The honey balances the heat of the chipotle paste and adds a touch of sweetness, giving these tacos a delightful flavor contrast.
Chipotle paste - This is the heart of the smoky, spicy flavor in the recipe. It gives the cheesy chipotle steak tacos that signature heat and depth. I love using chipotle paste because it’s packed with smoky goodness that doesn’t overwhelm the other flavors.
Lime juice - The acidity of the lime juice cuts through the richness of the steak and cheese, brightening up the entire dish. Plus, it adds that fresh, tangy kick that’s essential in Mexican-inspired dishes.
Fajita seasoning - A simple seasoning blend that amps up the flavor of the steak marinade. It’s a shortcut to ensuring the steak is perfectly seasoned with all those savory spices.
Toppings
Tomatoes and red onion - Fresh, diced tomatoes and onions add a crunchy, refreshing contrast to the richness of the steak and cheese. They also bring a burst of color and brightness to the tacos.
Avocados - Creamy mashed avocado adds a cool, buttery element that balances the spice from the chipotle paste. Avocado is a must-have in these cheesy chipotle steak tacos for its smooth texture. You could also use fresh guacamole here.
Salt and pepper - Simple seasonings that bring out the best in every ingredient.
Coriander (fresh cilantro) - A fresh herb that adds a zesty, citrusy flavor. I love adding coriander to these tacos because it enhances the lime’s freshness and ties all the flavors together.

Method

- Step 1: In a bowl, whisk together the quick marinade of honey, olive oil, chipotle paste, lime juice, and fajita seasoning. This marinade is packed with smoky, sweet, and tangy flavors that will infuse the steak with incredible taste.

- Step 2: Place the ribeye steaks in a container or on a plate, and generously coat them with the marinade. Cover with a lid or cling film and let the steak marinate for at least 30 minutes. The longer you let it sit, the deeper the flavors will penetrate.

- Step 3: While the steak is marinating, dice the tomatoes and red onion, then stir them together with chopped coriander, salt, and pepper. Set this mixture aside. Mash the avocado until smooth and creamy, then set that aside as well. Heat a pan or cast iron skillet over high heat. Once hot, add the marinated steaks and sear for about 1½ minutes until a nice char forms (cooking time will vary depending on pan and heat). Flip the steaks, then add a knob of butter to the pan and baste the steaks by spooning the melted butter over them for an additional minute. Remove from the pan and let the steak rest. Resting allows the juices to redistribute throughout the meat, making each bite juicy and tender.

- Step 4: In the same pan (after wiping out excess butter but leaving some of the flavorful steak juices), sprinkle the grated cheddar cheese in small circles. Place a mini tortilla on top of each cheese circle and cook for about 30 seconds, or until the cheese melts and crisps up, sticking to the tortilla. Repeat with the remaining tortillas. This cheesy crust is the signature element that makes these cheesy chipotle steak tacos stand out.
5. Step 5: Thinly slice the steak in to thin strips and begin building your tacos on the warm tortillas. Spread a layer of mashed avocado on each cheesy tortilla, add a few slices of steak, and top with the tomato-onion mixture. The combination of creamy avocado, juicy steak, and crispy-cheese tortilla creates a mouthwatering bite.

Hint: Let the steak marinate for at least 30 minutes, but if you have time, a few hours or overnight will result in even more flavor. The longer marination allows the spices and chipotle paste to deeply penetrate the meat.
Substitutions
Ribeye Steak - If you'd like a leaner cut, try sirloin, skirt steak or flank steak. For a different protein, chicken thighs or pork tenderloin are excellent alternatives that will still soak up the marinade beautifully.
Mini Tortillas - If you prefer a different tortilla base, corn tortillas offer a heartier texture. For gluten-free options, try lettuce wraps or gluten-free tortillas to keep it light and fresh.
Grated Cheddar - Swap cheddar with Monterey Jack for a mild, creamy alternative, or pepper jack if you want a bit of heat. If you’re dairy-free, a vegan cheese that melts well can be used.
Olive Oil - For a neutral flavor and higher smoke point, you can substitute avocado oil or grapeseed oil.
Honey - If you're looking for a different sweetener, maple syrup or agave syrup can provide a similar sweetness with a slight flavor twist.
Chipotle Paste - Replace chipotle paste with smoked paprika or chipotle chili powder for a smoky heat, or try sriracha for a spicier kick. To make chipotle paste, blend 4-6 dried chipotle peppers (soaked in hot water), 2 tablespoons of olive oil, 1 tablespoon of vinegar, 1 garlic clove, and a pinch of salt until smooth. Adjust the consistency with more oil or water as needed. Use in marinades or sauces for a smoky kick!
Lime Juice - If you don’t have lime, lemon juice works well to bring the same tangy brightness to the dish.
Fajita Seasoning - You can swap fajita seasoning with taco seasoning or a homemade mix of chili powder, cumin, paprika, and garlic powder.
Topping substitutions
Tomatoes - For a fresh and crunchy alternative to tomatoes, try diced bell peppers or cucumbers. You could also substitute the tomatoes and red onions for a corn salsa or adobo sauce.
Red Onion - White onion, shallots, or green onions can be used if you want a milder or sweeter onion flavor.
Avocado - If you're out of avocados, use guacamole for a pre-made alternative, or swap in Greek yogurt for a creamy, tangy twist. You could also use sour cream for creaminess.
Coriander - If you’re not a fan of coriander, parsley or basil can offer a fresh, herbaceous flavor without the signature coriander taste.
Variations
Chicken Chipotle Tacos: Substitute the steak with grilled chicken thighs for a lighter version. The marinade works beautifully with chicken, and it cooks even quicker, making it ideal for busy weeknights.
Vegetarian Chipotle Tacos: Swap the steak for grilled portobello mushrooms or roasted cauliflower. These hearty vegetables soak up the chipotle marinade just as well, offering a satisfying, plant-based alternative.
Shrimp Chipotle Tacos: If you want to add a seafood twist to these easy steak tacos, use shrimp instead of steak or add shrimp along with the steak for a surf and turf style taco dish. Marinate them for a few minutes and cook quickly for a fresh, lighter take on these cheesy chipotle tacos.

Storage
If you have leftover steak, store it separately from the other taco components. Wrap the sliced steak in aluminum foil or place it in an airtight container in the fridge for up to 3 days. Reheat in a hot skillet for a few minutes to bring it back to life. The tomato-onion mixture and mashed avocado should be stored in separate airtight containers as well. The tomato mixture can last for up to 2 days in the fridge, but the avocado is best consumed fresh. To prevent browning, press plastic wrap directly onto the surface of the mashed avocado.
Tortillas can be stored in a sealed plastic bag at room temperature for up to 2 days or in the fridge for up to a week. For reheating, warm them in a dry skillet until soft and pliable.
Top Tip
For the best results, sear your steak in a hot pan without overcrowding it. A proper sear locks in juices and gives the steak a delicious crust, which enhances the flavor and texture in your tacos.
FAQ
Steak tacos should not be left out for more than 2 hours at room temperature to avoid bacterial growth. If the temperature is above 90°F (32°C), they should be refrigerated within 1 hour to ensure food safety.ere
Common steak cuts for tacos include ribeye, flank steak, skirt steak, or sirloin. These cuts offer a good balance of tenderness and flavor, especially when seared and sliced thinly against the grain.
Steak tacos can be healthy when balanced with fresh ingredients like avocado, tomatoes, and onions. Opting for leaner steak cuts and whole-grain tortillas, along with moderate cheese and healthy fats, makes them a more nutritious option.
