Ingredients
  

  • 2 ribeye steaks approximately 450g
  • 8 mini tortillas
  • 50 g grated cheddar
  • 2 tablespoon olive oil
  • 1 tablespoon honey
  • 1 tablespoon chipotle paste
  • 1 lime
  • 1 tablespoon fajita seasoning
  • 200 g tomatoes diced
  • 1 red onion diced
  • 2 avocados
  • Salt and pepper
  • 10 g coriander
  • 1 tablespoon butter

Instructions
 

  • In a bowl, whisk together the honey, olive oil, chipotle paste, lime juice, and fajita seasoning. This marinade is packed with smoky, sweet, and tangy flavors that will infuse the steak with incredible taste.

  • Place the ribeye steaks in a container or on a plate, and generously coat them with the marinade. Cover with a lid or cling film and let the steak marinate for at least 30 minutes. The longer you let it sit, the deeper the flavors will penetrate.

  • While the steak is marinating, dice the tomatoes and red onion, then stir them together with chopped coriander, salt, and pepper. Set this mixture aside. Mash the avocado until smooth and creamy, then set that aside as well. Heat a pan or cast iron skillet over high heat. Once hot, add the marinated steaks and sear for about 1½ minutes. Flip the steaks, then add a knob of butter to the pan and baste the steaks by spooning the melted butter over them for an additional minute to minute and a half. Remove from the pan and let the steak rest. Resting allows the juices to redistribute throughout the meat, making each bite juicy and tender.

  • In the same pan (after wiping out excess butter but leaving some of the flavorful steak juices), sprinkle the grated cheddar cheese in small circles. Place a mini tortilla on top of each cheese circle and cook for about 30 seconds, or until the cheese melts and crisps up, sticking to the tortilla. Repeat with the remaining tortillas. This cheesy crust is the signature element that makes these cheesy chipotle steak tacos stand out.

  • Thinly slice the steak and begin building your tacos. Spread a layer of mashed avocado on each cheesy tortilla, add a few slices of steak, and top with the tomato-onion mixture. The combination of creamy avocado, juicy steak, and crispy-cheese tortilla creates a mouthwatering bite.

Notes

Let the steak marinate for at least 30 minutes, but if you have time, a few hours or overnight will result in even more flavor. The longer marination allows the spices and chipotle paste to deeply penetrate the meat.
