Ingredients

Chicken Mince - Using chicken mince as the base for the meatballs makes them lean and tender. It’s lighter than beef or pork but still delivers plenty of flavor, especially when seasoned well.
Egg - The egg helps bind the meatballs together, ensuring they hold their shape while cooking. It also adds moisture, keeping the chicken meatballs juicy and soft.
Breadcrumbs - I like to add breadcrumbs to the mix because they help absorb some of the moisture, which makes the meatballs more tender. It also prevents them from drying out.
Parmesan - Parmesan brings that distinct, sharp saltiness that pairs perfectly with Caesar dressing. I love using it in both the meatballs and as a topping to add layers of flavor.
Italian Seasoning - This blend of herbs gives the meatballs a depth of flavor and a Mediterranean touch that complements the Caesar-inspired flavors.
Romaine Lettuce - Crisp romaine adds freshness and a bit of crunch, balancing out the rich meatballs and dressing. It’s a key ingredient in any Caesar dish!
Bread Rolls - The choice of rolls is essential here. A sturdy roll that toasts well holds up to the juicy meatballs and dressing without getting soggy.
Caesar Dressing - Caesar dressing ties everything together. I mix a bit into the meatball mixture for extra flavor and use more on top for that creamy, tangy finish.
Cooking Oil - A little oil is used to fry the meatballs to a perfect golden brown, ensuring they’re crispy on the outside and juicy on the inside.

Instructions

- Step 1: In a bowl, combine the chicken mince, egg, breadcrumbs, a tablespoon of Caesar dressing, Italian seasoning, and a pinch of salt and pepper. The Caesar dressing in the mix adds a creamy, tangy flavor that makes these meatballs pop.

- Step 2: Take a small amount of the mixture and roll it between your palms to form a meatball. Repeat until you have around 20 meatballs.

- Step 3: Heat the cooking oil in a pan over medium-high heat. Once the oil is hot, add the meatballs and fry them for about 10 minutes, turning them every minute to ensure they brown evenly on all sides. The internal temperature of the meatballs should reach 75°C (165°F) when fully cooked. During the last 5 minutes of cooking, I like to toast my rolls in the oven to get them warm and slightly crispy.

- Step 4: Slice the toasted bread rolls through the middle. Add a layer of sliced romaine lettuce and a sprinkle of Parmesan. Place the meatballs on top, then finish with more Parmesan and an extra drizzle of Caesar dressing on the chicken caesar sandwiches.
Hint: Toasting the bread rolls before assembling the sandwich adds a satisfying crunch and prevents the bread from becoming soggy. You can either toast them in the oven or on a grill. I find that this small step elevates the texture and keeps the sandwich more structured.
Substitutions
Chicken Mince - Substitute with turkey mince for a leaner option or pork mince for a richer flavor. For a vegetarian version, use plant-based mince or mashed chickpeas.
Egg - Replace with a flax egg (1 tablespoon flaxseed meal + 3 tablespoons water) for a plant-based alternative. You can also use 2 tablespoons of plain yogurt for moisture.
Breadcrumbs - Swap with panko for a lighter, crispier texture or use crushed crackers or oats. Gluten-free breadcrumbs work well for those with gluten sensitivities.
Parmesan - Use Pecorino Romano for a saltier, sharper flavor. Nutritional yeast is a great vegan option that still provides a cheesy taste.
Italian Seasoning - Create your own blend using dried oregano, basil, thyme, and rosemary. Herbs de Provence or mixed dried herbs work well, too.
Romaine Lettuce - Substitute with iceberg or baby gem lettuce for a similar crunch. Spinach or kale can offer a different texture and added nutrients.
Bread Rolls - Ciabatta, baguette, or hoagie rolls are excellent alternatives. For a lighter option, try whole-grain or gluten-free rolls.
Caesar Dressing - Use a Greek yogurt-based dressing for a healthier option, or a dairy-free Caesar dressing for those avoiding dairy. A light vinaigrette with lemon and garlic can also work.
Cooking Oil - Olive oil is a great alternative for a more robust flavor. Avocado oil or coconut oil are good options for higher smoke points.
Variations
Spicy Caesar Meatball Subs - Add crushed red pepper flakes to the meatball mixture and top with a drizzle of Sriracha mixed with Caesar dressing for a spicy kick. This variation brings heat and excitement to the classic recipe, perfect for those who enjoy bolder flavors in their sandwiches.
Grilled Chicken Caesar sandwiches - Instead of frying, grill the meatballs for a smokier flavor. Toast the rolls on the grill as well for extra crispness, and swap romaine for grilled baby gem lettuce. This variation adds a charred, savory twist to the original recipe.
Vegetarian Caesar Sandwich - Swap out the chicken meatballs for plant-based meatballs or crispy falafel. Use a vegetarian Caesar dressing and sprinkle with nutritional yeast instead of Parmesan for a plant-based twist that maintains all the flavor and crunch of a classic Caesar sandwich.
Equipment
Storage
If you have leftover Chicken Caesar Meatball Sub Sandwich components, you can store them separately to maintain freshness and texture. First, store the cooked meatballs in an airtight container in the fridge for up to 3 days. When reheating, you can either microwave them or warm them in the oven to retain some of their crispness.
The romaine lettuce should be kept in a separate airtight container in the fridge and consumed within 1-2 days to keep it crunchy. For the rolls, store them in a bread bag or airtight container to prevent them from drying out, but toast them again before serving for best results.
If you want to freeze the meatballs, let them cool completely and store them in a freezer-safe container for up to 3 months. Thaw them in the fridge overnight before reheating.
Top Tip
To ensure your meatballs are fully cooked, use a meat thermometer to check that they’ve reached an internal temperature of 75°C (165°F). This guarantees they’re safe to eat without drying them out. It’s especially helpful when working with chicken mince, which can overcook quickly.
