If you're a fan of chicken Caesar salads, you’re going to love this twist. These subs bring the bold flavors of a Caesar salad into a hearty, satisfying sandwich. This recipe combines juicy, herbed chicken meatballs with crispy romaine, creamy Caesar dressing, and a sprinkle of Parmesan, all nestled in a toasted roll.

Ingredients
  

  • 500 g chicken mince
  • 1 egg
  • 70 g breadcrumbs
  • 50 g parmesan
  • 1 teaspoon Italian seasoning
  • 1 head romaine lettuce
  • 4 bread rolls
  • 1 tablespoon caesar dressing and extra for topping
  • 1 tablespoon cooking oil

Instructions
 

  • In a bowl, combine the chicken mince, egg, breadcrumbs, a tablespoon of Caesar dressing, Italian seasoning, and a pinch of salt and pepper. The Caesar dressing in the mix adds a creamy, tangy flavor that makes these meatballs pop.

  • Take a small amount of the mixture and roll it between your palms to form a meatball. Repeat until you have around 20 meatballs.
  • Heat the cooking oil in a pan over medium-high heat. Once the oil is hot, add the meatballs and fry them for about 10 minutes, turning them every minute to ensure they brown evenly on all sides. The internal temperature of the meatballs should reach 75°C (165°F) when fully cooked. During the last 5 minutes of cooking, I like to toast my rolls in the oven to get them warm and slightly crispy.

  • Slice the toasted bread rolls through the middle. Add a layer of sliced romaine lettuce and a sprinkle of Parmesan. Place the meatballs on top, then finish with more Parmesan and an extra drizzle of Caesar dressing on the chicken caesar sandwiches.

Notes

Toasting the bread rolls before assembling the sandwich adds a satisfying crunch and prevents the bread from becoming soggy. You can either toast them in the oven or on a grill. I find that this small step elevates the texture and keeps the sandwich more structured.
