- Step 1: Start by preparing your ingredients by dicing the baby tomatoes and red onion. Grate the halloumi using a cheese grater.

- Step 2: Heat a non-stick pan over high heat. Add the grated halloumi to the pan. At first, it will seem like the cheese is melting, but give it a few minutes to start crisping up. Stir occasionally, allowing the halloumi to become golden brown and slightly crispy on the edges.

- Step 3: Once the halloumi has turned a gorgeous golden brown, stir in the chipotle paste, hot water, and honey. This combination will coat the halloumi, giving it a spicy-sweet glaze that’s packed with flavor. Stir everything well until the halloumi is evenly coated, then turn off the heat.

- Step 4: Toast the mini tortillas lightly in a dry pan or over an open flame until they are warm and slightly crisp. On each tortilla, smash a quarter of an avocado, then layer on a scoop of the honey chipotle halloumi mixture. Top with diced tomatoes, red onion, and a dollop of sour cream.
