Chicken Caesar Salad Lettuce Wraps in Rice Paper

Plus, the rice paper adds a unique twist to the classic lettuce wrap, giving it a soft yet sturdy texture to hold all those delicious fillings.

Ingredients
  

  • 300 g chicken breast fillets
  • 4 bacon rashers
  • 1 Head romaine or gem lettuce
  • 4 Rice paper sheets roughly 22cm
  • 2 teaspoon ceasar dressing plus extra for dipping if preferred
  • 30 g parmesan grated
  • 60 g panko breadcrumbs
  • 1 egg
  • Salt and pepper

Instructions
 

  • Season the chicken breasts with salt and pepper. Crack the egg onto a plate and whisk it. Spread ¼ of the panko breadcrumbs on another plate. Dip each chicken breast into the egg, ensuring both sides are coated, then press it into the breadcrumbs.

  • Repeat this process once more with each chicken breast until each has been dipped into egg and panko twice to achieve a thicker crispier coating. Add another ¼ breadcrumbs to the plate each time to prevent them getting soggy by adding them all at once.
  • Spray the coated chicken breasts lightly with cooking oil and place them in an air fryer. Cook at 200°C (390°F) for 20–25 minutes, flipping halfway through. Check that the internal temperature reaches 75°C (165°F).

  • While the chicken is air frying, cook the bacon in the air fryer or pan-fry it until crispy. Set it aside to cool slightly before chopping into bite-sized pieces. At his point also grate the Parmesan cheese and set aside. Prepare the lettuce leaves by trimming the edges to create a flat surface, which helps when rolling the rice paper wraps.

  • Fill a shallow bowl or plate with warm water. Dip a rice paper sheet into the water for about 10 seconds, then lay it flat on a clean surface then repeat with the other. Work one sheet at a time to prevent sticking.

  • Place a few pieces of lettuce in the center of the rice paper. Layer half the Parmesan, bacon, chicken, and a drizzle of Caesar dressing on top. Leave space at the edges for rolling.

  • Fold the top and bottom edges of the rice paper over the filling. Then, fold one side inward and roll tightly, sealing the edges as you go. Repeat for the second wrap. Slice the wraps in half for easier handling. I love serving these chicken Caesar lettuce wraps in rice paper on their own for lunch or pairing them with crispy fries for a heartier dinner.

Notes

Double-coat the chicken breasts in panko breadcrumbs for the best results. Press the breadcrumbs firmly onto the chicken to ensure they stick, and use olive oil spray before air frying for extra crunch.
