These cheeseburger Spring Rolls are a hit at any time of the year but really shine during summer BBQs, game days, and casual get-togethers. They're especially popular for Super Bowl parties and Fourth of July celebrations, where finger foods are key. Their fusion of classic American flavors with an Asian twist makes them a unique and crowd-pleasing addition to any event.

Ingredients

Beef Mince - Ground beef forms the hearty base of these cheeseburger spring rolls. Opt for a slightly fatty mix (around 80/20) to ensure juiciness without making the rolls greasy.
Eggs - One egg is mixed into the beef for binding, while the second is used to seal the spring rolls. This ensures a cohesive filling and perfectly wrapped rolls.
Onion - Diced onions bring sweetness and depth of flavor to the filling, balancing the richness of the beef and cheese.

Instructions

- Step 1: In a large mixing bowl, combine the beef mince, one cracked egg, diced onion, chopped pickles, ketchup, mustard, Cajun seasoning, salt, and pepper. Mix thoroughly until all ingredients are well combined. Don’t be afraid to use your hands for an even mix!

- Lay a spring roll wrapper with a point facing you. Place a strip of cheese about 1-2 inches above the bottom corner.

- Step 3: Add a heaping tablespoon of the cheeseburger mixture on top of the cheese, making sure it doesn’t spill over.

- Step 4: To roll the cheeseburger spring roll, take the bottom corner of the wrapper and fold it over the filling. Roll it once more until the corner is tucked under.

5. Step 5: Fold in both side corners to create an envelope shape. Continue rolling until a small corner remains.

6. Step 6: Brush the corners of the cheeseburger spring rolls with beaten egg and roll to seal. If you prefer extra security, double wrap the spring rolls by repeating the process with a second wrapper.

7. Step 7: Place the spring rolls on a tray with an open bottom, such as a metal air fry basket, to allow any grease to drip away. If the beef is particularly fatty, this prevents the rolls from becoming soggy, double wrapping the rolls will also help prevent this. Air fry at 400°F (200°C) for 20 minutes, or until golden and crispy.

8. Step 8: While the spring rolls are cooking, fry the bacon in a pan over medium-high heat with a bit of cooking oil. Cook until crispy on both sides. Transfer to a paper towel-lined plate to drain excess grease, then crumble into small pieces.
Once the spring rolls are done, drizzle with burger sauce and top with crispy bacon and crispy onions. Serve hot, with extra burger sauce on the side for dipping.

Hint: The higher the fat content of the beef, the more likely that grease will seep from the edges, make sure to use a fry basket in your air fryer or a metal rack on top of an oven tray to let this drip. Otherwise, double wrap the rolls to prevent them from leaking at the edges. Deep frying them will also prevent this.
Substitutions
Beef Mince - Ground turkey or chicken provides a leaner alternative, reducing fat content while still offering a savory flavor. This option is great for a lighter version of the spring rolls. For a vegetarian or vegan option, plant-based ground meats (like Beyond Beef) mimic the texture and flavor of beef without animal products.
Eggs -A flaxseed egg (1 tablespoon ground flaxseed + 3 tablespoon water) can replace the egg in the filling, making it a suitable option for vegan recipes. For sealing, use water or a cornstarch slurry. You could also use 100ml chicken stock in this recipe to give a similar wet consistency that will bind together the meat.

Pickles - Dill relish can be used to maintain the tangy element while offering a slightly different texture.
