Ingredients
  

  • 300 g orzo
  • 500 g beef mince
  • 1 tablespoon olive oil
  • 2 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 onion
  • 2 cloves garlic
  • 2 teaspoon dijon mustard
  • 1 teaspoon wholegrain mustard
  • 1 tablespoon honey
  • 150 ml double cream
  • 600 ml beef stock
  • 25 g parmesan
  • 5 g chopped parsley
  • Salt and pepper

Instructions
 

  • Heat the olive oil in a large deep pan over medium heat. Add the chopped onion and cook for a few minutes until softened and lightly golden. Add the beef mince to the pan along with paprika, dried oregano, dried thyme, salt and pepper. Cook while breaking it up until browned and cooked through. Add the garlic and cook for another minute.

  • Stir in the Dijon mustard, wholegrain mustard and honey until the beef is fully coated and fragrant. Add the orzo and stir well so it is evenly mixed through the beef. Pour in the double cream and beef stock. Stir and make sure nothing is sticking to the bottom, then cover with a lid or foil and allow to simmer on medium heat for about five minutes.

  • Remove the lid, stir thoroughly, then cover again for another five minutes until the orzo is tender and most of the liquid has been absorbed. Remove the lid completely and stir until the sauce thickens to your liking. Add the parmesan and chopped parsley, stir well, taste and adjust seasoning if needed.
    25 g parmesan, 5 g chopped parsley

Notes

Stir the orzo well when first added to prevent it sticking to the pan. This helps it cook evenly and absorb flavour from the sauce.
