Ingredients
  

  • 500 g beef mince or 1lb
  • 1 tablespoon olive oil or cooking oil
  • 1 onion chopped
  • 1 green pepper chopped
  • 2 cloves garlic minced
  • 30 g taco seasoning or fajita seasoning
  • 30 g grated cheddar
  • 2 tablespoon salsa
  • 1 tablespoon sour cream
  • 400 g chopped tomatoes 14oz
  • 100 ml beef stock
  • 5 g chopped coriander
  • 20 g tortilla chips
  • 350 g Pasta 12.5oz

For the Nacho Cheese

  • 3 Cheese slices
  • 50 ml milk

Instructions
 

  • In a large pan over medium-high heat, warm a bit of olive oil. Add the chopped onion and green pepper, sautéing for about 5 minutes until they soften and start to caramelize. Add the beef mince to the pan, breaking it up with a spatula. Sprinkle the taco or fajita seasoning over the beef, and stir well until the mince is fully browned and coated in the spices.

  • While your beef is cooking, begin to boil your favorite pasta according to package instructions, I like Rigatoni. This allows the cheesy nacho beef pasta to come together quickly. Add the minced garlic to the beef mixture and cook for another minute until fragrant. Then, pour in the chopped tomatoes and beef stock, stirring to combine. Lower the heat to a simmer, letting the sauce thicken and flavors meld.

  • If you’re making your own nacho cheese, start this now, break up and combine the cheese slices and milk in a small saucepan over medium heat. Stir for 1-2 minutes until melted and smooth then allow to simmer and thicken until the pasta is done. This sauce is perfect for drizzling on top of the cheesy nacho beef pasta.
    3 Cheese slices, 50 ml milk
  • Stir in the salsa, sour cream, and grated cheddar. This will make your sauce creamy and cheesy, with all the tangy, bold flavors of nachos. Let it simmer for a few more minutes to allow everything to melt together.
    30 g grated cheddar, 2 tablespoon salsa, 1 tablespoon sour cream
  • Drain the pasta and add it to the sauce, stirring until every piece is coated in that cheesy, beefy goodness. Spoon the nacho cheese drizzle over the pasta, then crush tortilla chips on top for a crunchy, nacho-inspired finish. Garnish with fresh coriander.
    20 g tortilla chips, 5 g chopped coriander

Notes

Brown the beef thoroughly to bring out rich flavors. Let it sit undisturbed for a minute or two before stirring for an even sear.
