Ingredients
  

  • 1 ribeye steak around 250g
  • 1 teaspoon fajita seasoning
  • 1 tablespoon olive oil
  • 1 teaspoon chipotle paste
  • 1 tablespoon butter
  • Salt and pepper

Toppings

  • Handful tortilla chips
  • 2 tablespoon nacho cheese or melted cheese
  • 2 tablespoon guacamole or 1 avocado mashed with a tablespoon red onion, salt, pepper, coriander and lime juice
  • 2 tablespoon pico de gallo or 100g tomatoes chopped and mixed with 1 tablespoon chopped red onion and 1 teaspoon coriander, salt and pepper
  • 2 tablespoon sour cream

Instructions
 

  • Remove the steak from the fridge about 30 minutes before cooking so it can come to room temperature. This helps it cook more evenly, which is key for perfect cheesy steak nacho bowls. Season the steak. Rub the steak with olive oil, fajita seasoning, salt and pepper on both sides. Let it sit while you prepare your toppings.

  • Add tortilla chips, guacamole, pico de gallo and sour cream to your bowls. Leave space for the steak. Building your base first makes assembling cheesy steak nacho bowls quick once the steak is ready. Heat a pan over high heat until very hot. Add the steak and cook for about 1.5 minutes on each side for a nice crust.

Notes
