Charcuterie Pesto Pasta Salad

If you love the flavours of a classic charcuterie board but want something fresh, vibrant, and easy to throw together, this charcuterie pesto pasta salad is the perfect recipe. Packed with salty cured meats, juicy tomatoes, creamy mozzarella, and rich basil pesto, this pasta salad brings together everything people love about antipasti platters in one bowl.

Ingredients
  

  • 200 g pasta
  • 50 g salami
  • 50 g chorizo
  • 80-90 g prosciutto
  • 200 g mixed colour tomatoes
  • 125 g mozzarella
  • 2-3 tablespoon pesto
  • 25 g Parmesan
  • 1-2 tablespoon pinenuts toasted, optional
  • Salt and pepper

Instructions
 

  • Bring a large pan of salted water to the boil and cook the pasta according to the package instructions until al dente. Drain when ready and allow it to cool slightly. Add to a bowl

  • Stack the salami slices and cut them into quarters. Repeat with the chorizo. Tear half of the prosciutto into small pieces and set the remaining slices aside for crisping later. Slice the tomatoes in half and cut the mozzarella into bite-sized cubes. Add the salami, chorizo, torn prosciutto, tomatoes, mozzarella, pesto, parmesan, and toasted pine nuts to a large bowl. Season with salt and pepper, then toss everything together until evenly coated.

  • Lay the remaining prosciutto slices flat on a microwave-safe plate. Microwave for around 4 minutes until crisp, then leave to cool completely as it will continue crisping while cooling. Plate up and top with crispy prosciutto.

Notes

Cook the pasta just until al dente so it keeps its texture once mixed with the pesto and other ingredients. Overcooked pasta can become soft and absorb too much dressing, making the salad heavy rather than fresh and vibrant.
